1

Begin by mixing warm milk with sugar and salt until dissolved.

2

Add refined flour and whole wheat flour to the milk mixture.

3

Knead the mixture by hand, adding more water if necessary, until a soft and pliable dough forms.

4

Transfer the dough to a workbench and knead for 10-12 minutes, pushing and pulling to develop gluten.

5

Once kneaded, collect the dough and place it in a bowl, covering it with a cloth. Let it rest for 15-20 minutes.

6

Prepare a normal Kadai by turning it upside down and placing it on the stove to heat.

7

Divide the dough into lemon-sized balls and dust with flour.

8

Take one dough ball, press it flat, and roll it thin. Flip it with the back of your palm to increase size without tearing.

9

Once rolled thin enough to see fingers through, place it on the heated Kadai.

10

Cook for a few seconds, flipping as needed, until the Rumali Roti is done and ready.
