1

Soak 1 cup of black urad dal and 1/4 cup of raw rice for about 6 hours.

2

Drain the soaked rice and transfer it to a mixer jar.

3

Discard the water from the urad dal and transfer it to the mixer jar.

4

Add finely chopped ginger, chopped green chili, and salt to the mixer jar.

5

Grind everything together, adding 1 to 2 teaspoons of water as needed to achieve a thick batter.

6

Transfer the batter to a bowl and add finely chopped onion, crushed pepper, and chopped curry leaves; mix well.

7

Pour enough oil for deep frying into a kadai and heat it on medium flame.

8

Once the oil is hot, wet your fingers and take a small portion of the batter, pressing it down in your palm to shape it into a vada with a hole in the center.

9

Gently drop the vadas into the hot oil and deep fry them on medium flame until golden brown, making sure not to overcrowd the kadai.

10

Remove the fried vadas and serve hot with chutney.
