Grate about 1 cup of Granny Smith apple using a large grater.

In a mixing bowl, combine 2 cups flour, 1 cup sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, 1/2 teaspoon all spice, 1/2 teaspoon salt, and 1 tablespoon baking powder. Mix together.

In a separate container, combine 1 cup milk, 1 teaspoon vanilla extract, and 2 eggs. Ensure all ingredients are at room temperature before mixing.
