Wash the watermelon thoroughly with soda under running water.

Cut the watermelon into pieces that fit through the neck of the jar.

If you don't like watermelon with skin, you can remove the green part but place it at the bottom of the jar for added aroma.

Pack the watermelon tightly into two-liter sterilized jars without pressing too hard to avoid damaging the pieces.

Pour boiling water over the watermelon, cover with lids, and let sit for 30 minutes.

After 30 minutes, drain the water into a measuring pot to determine the amount of brine needed.
