Cedar-Planked Salmon

1 large cedar plank (soaked in water for at least 1 hour)
4 salmon fillets (6 oz each)
2 tbsp maple syrup
1 tbsp dried tarragon
1 tsp salt

Soak the cedar plank in warm water for at least 1 hour, preferably overnight.

If the cedar plank floats, weigh it down with tin cans.

Preheat the barbecue to medium on one side and high on the other side.

Brush the salmon fillets with maple syrup.

Sprinkle the salmon with dried tarragon and salt.

Place the soaked cedar plank on the medium heat side of the grill.

Put the salmon fillets on the cedar plank.

Close the lid of the barbecue and grill for about 20 to 30 minutes.

Check the salmon occasionally to see how it's cooking.

If there are flare-ups, have a bottle of water on hand to spray it down.

Check the doneness of the salmon by slipping a knife into the center; if the knife comes out warm, it's ready.

Remove the salmon fillets to a platter, leaving the cedar plank behind.

Turn off the barbecue and allow the plank to cool on the grill.
