Cover with another circle of dough and seal the edges firmly.
Boil water in a large pot and add salt.
Cook the sorrentinos in boiling water until they float, about 3-5 minutes.
Remove and drain the sorrentinos carefully.
Prepare a sauce by sautéing garlic and onion in olive oil until fragrant.
Add tomato sauce and simmer for 10 minutes; season with basil and pepper.
Serve the sorrentinos topped with the sauce and grated parmesan.
