Cut the onion into small pieces and set aside.
Cut the garlic clove and set aside.
In a bowl, make a hole in the flour and add the egg yolk, salt, and oil.
Mix the ingredients in the flour hole together.
Add the hot water and continue mixing until a dough forms.
Transfer the dough to a table and knead until it is flexible and not sticky.
Wrap the dough in plastic and let it rest for 30 minutes.
Heat a frying pan and add a little oil, then add the spinach to reduce its volume.
Cover the spinach while it reduces, then transfer it to a board to cool and chop.
In the same frying pan, add a little oil and sauté the onion until transparent, then add garlic.
Chop the cooled spinach and add it to a bowl with the sautéed onion and garlic, mozzarella, ricotta, Parmesan, nutmeg, walnuts, and a little salt; mix well.
Run the rested dough through a pasta machine, starting with smaller settings and increasing to the second to last setting.
Cut the rolled dough into circles using a round mold.
Place a small amount of filling in the center of each circle, wet the edges with water, and place another circle on top, pressing to seal and remove air bubbles.
Prepare a pot of boiling water and cook the sorrentinos for 2-3 minutes until they float.
Remove the sorrentinos from the water and serve.
