Place 400g of flour on a clean surface, forming a mound.
Create a well in the center of the flour and add 2 eggs, 2 egg yolks, and salt.
Gradually mix the flour into the eggs using a fork, incorporating a little at a time.
Once the mixture is combined, start kneading the dough with your hands.
Add a few tablespoons of olive oil to the dough to make it more elastic.
Knead the dough for about 20 to 40 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 30 minutes.
After resting, knead the dough again for a few minutes.
Divide the dough into two pieces and wrap them in plastic to prevent drying out.
Prepare the filling by cutting ham and mozzarella cheese into small cubes.
Mix the ham and mozzarella with ricotta cheese, ensuring the mixture is not too wet.
To prevent the filling from being too watery, squeeze excess moisture from the ricotta using a cloth.
Roll out the rested dough thinly on a floured surface.
Cut the rolled dough into circles using a cutter.
Place a spoonful of filling on half of the dough circles.
Cover with another circle of dough and seal the edges firmly, ensuring no filling escapes.
Boil water in a large pot and add salt.
Cook the sorrentinos in boiling water until they float, about 3-5 minutes.
Remove and drain the sorrentinos carefully.
