Instructions
- 1Mix whole wheat flour, ajwain seeds, and salt in a bowl.
- 2Add yogurt and water gradually, kneading until smooth.
- 3Cover the dough with a damp cloth and let it rest for 30 minutes.
- 4Divide the dough into equal portions and roll each into a ball.
- 5Flatten each ball slightly, then roll out into a circle on a floured surface.
- 6Heat a skillet over medium heat and add a little ghee or oil.
- 7Place the rolled-out paratha on the skillet and cook until bubbles form, about 2-3 minutes.
- 8Flip the paratha and apply ghee on the cooked side, cooking for another 2-3 minutes.
- 9Press down with a spatula to ensure even cooking and browning.
- 10Remove from skillet and keep warm in a towel while cooking the remaining parathas.
- 11Serve hot with yogurt or pickles.

- ●1/2 tsp red chili powder
- ●2 tbsp chopped fresh coriander
- ●2 tbsp oil (for cooking)
Instructions
- 1In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 30 minutes.
- 2In another bowl, mix grated beetroot, chopped onion, cumin seeds, garam masala, red chili powder, and fresh coriander. Mix well to combine.
- 3Divide the dough into equal portions and roll each portion into a small ball.
- 4Take one ball of dough and flatten it slightly. Roll it out into a small circle on a floured surface.
- 5Place a spoonful of the beetroot mixture in the center of the rolled dough circle.
- 6Fold the edges of the dough over the filling to seal it completely, forming a stuffed ball.
- 7Gently flatten the stuffed ball and roll it out into a larger circle, being careful not to let the filling escape.
- 8Heat a tawa or skillet over medium heat. Place the rolled paratha on the hot tawa and cook for 1-2 minutes until small bubbles form.
- 9Flip the paratha and brush with a little oil. Cook for another 1-2 minutes until golden brown and cooked through.
- 10Repeat the process with the remaining dough and filling.
- 11Serve hot with yogurt or pickle.
