Mix sugar, sake, soy sauce, mirin, and miso together.

Cut shiso leaves in half and cut water eggplants into wedges.

Wrap water eggplants with shiso leaves and then with pork.

Place in a frying pan with oil and sprinkle with salt and pepper.

Cover and cook over medium heat, then flip and cook on low heat until done.

Add the mixed sauce from step 1 and coat well before serving.
