Melt dark chocolate in a heatproof bowl over simmering water until smooth.
Remove from heat and stir in butter until fully incorporated.
Add heavy cream and vanilla extract, mixing until well combined.
Chill the mixture in the refrigerator until firm, about 1-2 hours.
Scoop out small portions of the chocolate mixture and roll into balls.
Chill the chocolate balls again for about 30 minutes to firm up.
Melt milk chocolate in a heatproof bowl over simmering water.
Dip each chocolate ball into the melted milk chocolate, ensuring it's fully coated.
Place dipped chocolates on a parchment-lined baking sheet.
Sprinkle with sea salt or chopped nuts before the chocolate sets.
Chill again until the coating is firm, about 30 minutes.
For truffles, roll in cocoa powder or chopped nuts for decoration.
Store in an airtight container in a cool place.
