Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. 1Preheat your waffle iron according to the manufacturer's instructions.
  2. 2In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. 3In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. 5Lightly grease the waffle iron with cooking spray or a little melted butter.
  6. 6Pour the appropriate amount of batter onto the preheated waffle iron (usually about 1/2 to 3/4 cup, depending on the size of your iron).
  7. 7Close the lid and cook according to the manufacturer's instructions, usually about 5 minutes, until the waffles are golden brown.
  8. 8Carefully remove the waffles and keep them warm in a low oven while you repeat with the remaining batter.
  9. 9Serve the waffles warm with additional butter and syrup, or your favorite toppings.

Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract (for waffles)
  • 1 cup heavy cream
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. 1In a medium saucepan, combine the mixed berries, sugar, lemon juice, and vanilla extract. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes. Remove from heat and let cool.
  2. 2In a large bowl, whisk together the flour, sugar, baking powder, and salt for the waffles.
  3. 3In another bowl, mix the milk, egg, melted butter, and vanilla extract. Combine the wet and dry ingredients, stirring until just combined.
  4. 4Preheat a waffle iron according to the manufacturer's instructions. Pour the batter into the preheated waffle iron and cook until golden brown and crispy, about 5 minutes. Repeat with the remaining batter.
  5. 5While the waffles are cooking, prepare the cheesecake whipped cream. In a mixing bowl, beat the heavy cream until soft peaks form.
  6. 6Add the softened cream cheese, powdered sugar, and vanilla extract to the whipped cream. Continue to beat until stiff peaks form and the mixture is well combined.
  7. 7To serve, place a waffle on a plate, top with a generous spoonful of berry compote, and dollop with cheesecake whipped cream.
