Spread half of the mascarpone mixture over the cookies evenly.
Repeat with another layer of soaked cookies and the remaining mascarpone mixture.
Sift cocoa powder over the top layer of mascarpone.
Chill in the refrigerator for at least 4 hours or overnight for best results.
Before serving, shave dark chocolate on top for garnish.
