1/2 cup roasted pine nuts
2 cloves garlic
1 bunch fresh parsley
1/3 cup raisins

Soak 1 cup of bulgur in water for at least 1 hour.

Drain the bulgur and place it into a large mixing bowl or food processor.

Cut the red bell pepper into large chunks if using a blender or into small bite-sized pieces if mixing by hand.

Chop the onion into large chunks for a blender or into small pieces for hand mixing.

Drain and add 1.5 cups of chickpeas to the mixture.

Add 1/2 teaspoon of cayenne pepper (optional), 1/4 teaspoon of cumin seeds, and 2 teaspoons of salt.

Blend the mixture in a food processor or mash it together by hand with a potato masher or fork.

Chop the cilantro finely and add it to the mixture along with 1/3 cup of raisins and 1/2 cup of roasted pine nuts; mix well.

Form balls by patting down some of the chickpea mixture, adding a filling of cilantro, pine nuts, and raisins, then covering with more chickpea mixture and squishing together.

Place the formed kibbeh in an oven or air fryer and bake at 400°F for about 15 minutes.

Prepare the sauce by squeezing the juice of 2 limes, adding 1/4 cup tahini, and mixing with olive oil.

Chop a clove of garlic finely and add it to the sauce along with some chopped cilantro.

Check on the kibbeh after baking; they should look golden-brown.
