1/2 teaspoon dried dill
1/2 teaspoon dried rosemary

Set the Instant Pot to sauté on high (or 'more').

Add 3 tablespoons of avocado oil and let it heat up until hot.

In a bowl, combine 1.5 pounds of stew meat with 1/4 cup of all-purpose flour, salt, and black pepper to coat the meat.

Add the coated meat to the hot Instant Pot and brown on all sides for about 5 minutes.

Remove the browned meat from the pot, scraping the bottom to get the flour and brown bits.

Pour in 1/2 cup of bourbon to deglaze the pot, scraping the bottom while it reduces.

Add 2 cloves of minced garlic and 1.5 cups of beef broth to the pot, stirring to combine and ensure nothing is sticking to the bottom.

Add 8 ounces of tomato sauce, 2 teaspoons of paprika, 3 teaspoons of Worcestershire sauce, a pinch of red pepper flakes, and 1/2 teaspoon each of dried basil, thyme, dill, and rosemary to the pot.
