1

Remove the casings from the sausage and add to a large mixing bowl.

2

Add ground beef to the bowl and mix with hands until fully combined.

3

Add almond flour, grated Parmesan cheese, chopped parsley, chopped chives, minced garlic, salt, ground black pepper, onion powder, garlic powder, mustard powder, Italian seasoning, cayenne pepper, and a lightly beaten egg to the meat mix.

4

Mix well with hands until everything is fully combined and cover the bowl, placing it in the refrigerator for at least 30 minutes.

5

Lightly grease a 9 by 13 inch baking dish.

6

Roll a small amount of meat mixture into a ball about the size of a golf ball and place in the baking dish, repeating until all meat is used (about 28 meatballs).

7

Preheat oven to 375°F and place the baking dish in the oven for about 30 minutes or until fully cooked.

8

In a sauce pot on medium-high heat, add water, reduced sodium soy sauce, apple cider vinegar, brown sugar substitute, minced garlic, granulated stevia, and red pepper flakes, stirring to combine.

9

Gently sprinkle xanthan gum into the sauce and continue mixing until it begins to simmer, then reduce heat to low and cook until desired thickness is reached.

10

Remove meatballs from the oven and transfer to a paper towel-lined plate to drain excess grease.

11

Place meatballs in a mixing bowl and pour half of the sauce over the top, stirring to coat.

12

Plate a serving of meatballs and add a little sauce to a small bowl for dipping, garnishing with chopped chives.
