Prepare homemade nihari spice mix by grinding the whole spices: 1 tablespoon black pepper, 3-4 long pepper, 3-4 nutmeg, 3-4 cinnamon, 3-4 green cardamom, 5-6 black cardamom, 1 teaspoon black cumin, 1 tablespoon white cumin, 2 tablespoons coriander seeds, and 1.5 tablespoons fennel seeds.
