Preheat the oven to 350°F (175°C).
In a large bowl, mix flour, ground almonds, sugar, cinnamon, and salt.
Cut in butter until the mixture resembles coarse crumbs.
Add egg yolk, vanilla extract, and lemon zest; mix until a dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Roll out two-thirds of the dough on a floured surface to fit a tart pan.
Press the rolled dough into the bottom and up the sides of the tart pan.
Spread raspberry jam evenly over the crust.
Roll out the remaining dough and cut into strips to create a lattice pattern over the jam.
Bake in the preheated oven for 30-35 minutes, until golden brown.
Allow to cool before dusting with powdered sugar.
