1 kg pork shoulder (pre-seasoned with oil, salt and pepper)
500 g onion
700 g red or mixed coloured peppers
150 g tomato paste
2-3 tsp sweet paprika
salt and pepper to taste
200 ml red wine
3 pinches dry thyme or rosemary
200-250 ml water
chopped fresh parsley

Cut the vegetables into strips

Dice the meat and marinate it 15 minutes earlier in salt, pepper and oil.

Heat oil in a suitable saucepan and fry the meat, adding it in two parts.

Add the vegetables and a little salt, put a lid on and cook for 5 minutes or until the vegetables are soft. Stir so that they do not burn.

Add the tomato puree and paprika, cook for few more minutes.

Then add the red wine, water and dry herbs. Mix well. Season as needed.

Let it simmer on low heat for about 30-40 minutes or until the meat is tender.

Turn off the heat and add finely chopped parsley.
