Saute onion, celery, mushroom, and raisins in about a quarter to a half a cup of butter and some olive oil.
Mix the sautéed mixture with bread crumbs and poultry seasoning.
Stuff the turkey thighs with the prepared stuffing and tie them up securely.
Baste the turkey thighs with a mixture of olive oil, poultry seasoning, salt, and pepper.
Add 2 cups of chicken broth to the bottom of the Instant Pot along with coarsely chopped celery, onion, and garlic.
Place a trivet in the Instant Pot and set the stuffed turkey thighs on top.
Seal the Instant Pot lid and set to pressure cook on high for 35 minutes.
For the cranberry sauce, add a 12-ounce bag of fresh cranberries, orange juice, water, honey, allspice, and a cinnamon stick to the small Instant Pot.
Seal the lid and pressure cook the cranberry sauce for 3 minutes, then allow natural release.
After cooking, remove the turkey thighs and place them under the broiler until the skin is crisp.
Prepare the gravy using the liquid from the Instant Pot, whisking it with cornstarch until thickened.
