Crispy Pizza with Tomato and Basil

In a bowl, add the flour and make a well in the center. Crumble the fresh yeast into the well.
Pour in the lukewarm water and olive oil, and mix well with a spoon until combined.
Add the salt and continue mixing.
Cover with a cloth and let it rise for 30 minutes.
After 30 minutes, uncover and mix again, bringing the dough from the bottom to the top.
Cover again and let it rise for about 4 hours.
While the dough is rising, prepare the tomato sauce by mixing the chopped tomato pulp with a pinch of salt, a pinch of sugar, olive oil, and fresh basil, then blend with an immersion blender.
Once the dough has risen, pour it onto a baking sheet lined with parchment paper and lightly oiled.
With oiled hands, spread the dough on the baking sheet.
Heat the prepared tomato sauce slightly to encourage the second rise, then distribute it over the dough.
Let it rest for about 30 minutes.
Preheat the oven to 220/250°C.
Once preheated, bake the pizza in the oven for about 20 minutes.
Remove the baking sheet, add the sliced mozzarella and preferred toppings, and bake for another 5-10 minutes.
