3/4 cup (75g) sugar

1/4 teaspoon ground nutmeg
1/8 teaspoon ground clove
1 1/2 cups (200g) flour
1 tablespoon sugar
8 tablespoons butter, diced
1 egg yolk
1/4 cup (50ml) milk
3 egg whites
3 tablespoons sugar
3 tablespoons golden syrup

To make the pie crust, add the flour, sugar, spices, and butter to a large bowl. Mix the butter in with your finger until it feels like wet sand.

In a small measuring cup, mix the egg yolk and milk together. Drizzle over the dough and work in with a spatula. If it looks too wet, add a bit more flour (up to a 1/4 cup).

Shape the dough into a ball and drop it onto a piece of plastic wrap. Knead the dough into a disc in the plastic to help reduce the amount of shaping it will need later. Cover with the plastic and chill for 20 minutes.

Roll out the dough to a 9"/23cm disc. Press it into the pie plate, cut off any excess, and patch any breaks in the crust with the scraps. Use a fork to decorate the outside of the crust. Chill the crust in the pie plate for 10 minutes.

To make the pie filling, empty one can of pumpkin puree into a bowl. Add the sugar and spices and mix together.

Add the eggs and whisk until they're combined. Add some of the evaporated milk and whisk. Add a little at a time until you have a consistency that is just a bit thick.

Preheat the oven to 425°F/218°C.

Place the pie dish on a baking sheet. Fill the pie crust while it's sitting on a rack with the oven open to prevent spills.

Bake the pie for 15 minutes, then reduce the temperature to 350°F/180°C and bake for another 30-40 minutes. Check at 30 minutes; a cocktail stick should come out mostly clean.

Allow the pie to cool completely before decorating.

To make the meringue, add the egg whites, sugar, and golden syrup to a medium bowl. Place the bowl over a pot of simmering water and whisk at high speed for 5-7 minutes, or until it thickens and keeps its shape.

Transfer to a piping bag and decorate as desired.
