Rinse basmati rice under cold water until water runs clear.
Soak the rice in water for 30 minutes and drain.
Heat ghee in a large pot over medium heat until shimmering.
Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon stick; sauté until fragrant, about 1 minute.
Stir in chopped onion, ginger, garlic, and green chilies; cook until onion is golden, about 5-7 minutes.
Add mixed vegetables and turmeric powder; sauté for 3-4 minutes until vegetables are slightly tender.
Add the soaked rice and stir gently to combine with the vegetables.
Pour in water and add salt; bring to a boil.
Reduce heat to low, cover the pot, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Remove from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and garnish with chopped coriander leaves before serving.
