Japanese Hamburg Steak with Cheese

Mince and sauté onion and garlic, then cool them off beforehand.

In a bowl, add 300g of ground meat and 3g of salt (about 1% of the meat weight).

Add less than 1g of black pepper (about two strokes with a peppermill).

Knead the ground meat with salt until it becomes sticky, using your palm to squash the meat down.

Add half a beaten egg, 2 tbsp each of milk and breadcrumbs, and the cooled minced onion and garlic.

Add 1 tbsp each of ketchup and Worcestershire sauce, then mix thoroughly.

Take a handful of the meat mixture and wrap a piece of Brie cheese in the middle, shaping it into a ball.

If concerned about the cheese leaking, refrigerate the shaped patties for 30 to 60 minutes to let them harden.

Heat a pan over medium to high heat and spread oil over it.

Place the patties in the pan and cook until they start to brown, then turn them over.

Cover the pan and cook over low heat for about 10 minutes to ensure the inside is cooked.

Dump out excess oil from the pan, keeping any gravy and brown bits for flavor.

Add 100ml of red wine to the pan and bring it to a boil to burn off the alcohol.

Once the alcohol is burned off, add 1 tbsp of demi-glace sauce, 1 tbsp of Worcestershire sauce, and 1 tbsp of ketchup to the pan.

Simmer the sauce until it thickens, then pour it over the Hamburg steaks before serving.
