1

Wash goat meat with salt, lime juice, and white vinegar for 15 minutes to remove any strong odor.

2

Rinse the goat meat three times with lime, vinegar, and salt.

3

Add black pepper, dried thyme, paprika, adobo seasoning, and fresh Dominican oregano to the meat.

4

Grate three cloves of fresh garlic and add to the meat mixture.

5

Add one tablespoon of liquid seasoning and mix all ingredients well.

6

Place the seasoned goat meat in a plastic bag and refrigerate overnight for better flavor.

7

The next day, heat a large pot on the stove and add oil to caramelize sugar.

8

Add the goat meat to the pot and let it brown in its own juices without adding any liquid.

9

Once the meat has browned, add one tablespoon of tomato paste and mix well.

10

When the tomato paste has dissolved, add two cups of water to the pot.

11

Add whole pieces of bell peppers, onion, and green onion tied together for easy removal later.

12

Cover the pot and let it cook, checking occasionally.

13

After some time, if the water has evaporated, add two more cups of water and cover again.

14

Peel the yuca and check for any bad spots before boiling.

15

In a separate pot, add water and salt to boil the yuca.

16

Once the yuca is tender, remove it from the water.

17

Remove the whole vegetables from the goat meat pot and add fresh chopped vegetables for garnish.

18

Use a spoon to remove excess fat from the goat meat.

19

Add a clove of fresh garlic, a bit of oregano, chopped bell peppers, and onion to the goat meat and cover for 3 minutes on low heat.

20

Serve the goat meat with the boiled yuca.
