Add ice to the cocktail glass to keep it cold.

Add a lot of ice to the cocktail shaker.

Pour in 0.5 oz of pasteurized egg white.

Add 1 oz of fresh squeezed lemon juice to the shaker.

Pour in 2 oz of Luxardo amaretto.

Scoop in some lemon sorbet.

Shake all the ingredients together vigorously to emulsify the egg white and chill the drink.

Strain the mixture into the chilled cocktail glass.

Garnish with three Luxardo maraschino cherries on a pick.

Top with zested lemon peel and squeeze it over the drink.
