Start with a shaker.

Add 30 ml sugar syrup to the shaker.

Add 30 ml fresh squeezed lemon juice to the shaker.

Add 1 egg white to the shaker.

Perform a dry shake (shake without ice) for the sugar syrup, lemon juice, and egg white.

Take another shaker and add 45 ml amaretto.

Add 2 dashes of Angostura bitters to the amaretto shaker.

Put ice into the shaker with amaretto and bitters.

Shake the amaretto and bitters with ice.

Strain the mixture into a glass and top with a dash of Angostura bitters.
