Start by chilling your glass with ice.

In a cocktail shaker, add 1 1/2 oz of amaretto.

Pour in 3/4 oz of apple brandy.

Add 1 oz of fresh lemon juice.

Pour in 1/4 oz of rich demarara syrup.

Add 1/2 oz to 3/4 oz of egg white to the shaker.

Perform a dry shake (shake without ice) for about 10 to 15 seconds to emulsify the ingredients.

Add ice to the shaker and shake again for another 10 to 15 seconds.

Remove the ice from your chilled glass.

Double strain the mixture into the glass over fresh ice.

Express lemon oil over the top of the drink to reduce any eggy smell.

Garnish with a maraschino cherry.
