Agave syrup offers a lower glycemic index.

Crack an egg and add the egg white to a large shaker tin.

In the opposite shaker tin, add 1 ounce of fresh lemon juice.

Optionally add 0.25 ounce of simple syrup.

Add 0.5 ounce of rye whiskey to the shaker.

Add 1.5 ounces of Disaronno to the shaker.

Shake the ingredients without ice for 5 to 10 seconds to emulsify the egg white (this is called a dry shake).

Add ice to the shaker and shake again until well chilled.

Double strain the mixture into a chilled coupe or cocktail glass.

Allow a couple of seconds for the egg whites to settle in the glass.

Add a couple dashes of bitters on top and create a design if desired.
