Jollof Rice

1 cup onion strips
1/2 cup fresh pepper
3 cloves garlic
2 tablespoons tomato paste
1 cup blended tomato and tatashe mix
1 tablespoon curry powder
1 teaspoon seasoning cube powder
1/2 teaspoon nutmeg
1 teaspoon salt
2 cups water or stock
2 bay leaves
1 lb diced chicken pieces
2 tablespoons butter
1 cup diced onions
1 cup diced carrots
1 cup sweet corn
1 cup diced red bell peppers
1 cup diced green bell peppers

Drizzle oil in a pan and allow to heat up slightly.

Add onion strips and saute until fragrant.

Add fresh pepper and garlic, stir fry for a few seconds.

Add tomato paste and fry thoroughly for about 5 minutes.

Add blended tomato and tatashe mix, curry powder, seasoning cube powder, nutmeg, and a sprinkle of salt. Mix everything together.

Cover the pot and fry for another 7-8 minutes.

Add washed rice and bind everything together with the sauce.
