1 bay leaf
1 dried red chilly

5 cloves
1 inch cinnamon stick
9-11 peppercorns
1/2 tsp sugar
tamarind (marble sized ball, soaked in warm water)
1/4 tsp turmeric powder
1/8 cup vinegar
4 tbsps oil
2 medium potatoes (cut into big cubes)
2 medium onions (cut into slices)

Grind 5 cloves of garlic, 1 inch piece of ginger, 4-5 green chillies, and 1 lemon juice to a smooth paste.

In a bowl, mix 500g of boneless mutton with 1 tsp salt and the ground paste; marinate for 1 hour.

For the masala paste, grind together 1 bunch of cilantro, 1 bay leaf, 1 dried red chilly, 2 green cardamom, 1 black cardamom, 1/2 tsp cumin seeds, 5 cloves, 1 inch cinnamon stick, 9-11 peppercorns, 1/2 tsp sugar, tamarind (soaked), and 1/4 tsp turmeric powder with 1/8 cup vinegar to a thick paste.

Heat 4 tbsps of oil in a large pot.

Add 2 medium potatoes (cut into big cubes) and fry until lightly golden; remove and keep aside.

Add 2 medium onions (cut into slices) to the pot and sauté until golden brown.

Pour the ground masala paste into the pot and fry until the oil separates.

Add the marinated mutton pieces to the pot and fry the meat for 5-7 minutes on high heat.

Add 1 1/2 cups of water and the fried potatoes to the pot.

Add 1 cube of Maggi (chicken or beef) and adjust salt as needed.

Pressure cook on medium heat until two whistles are heard.
