1 pound ground beef (80/20)

Chop the large onion into large pieces and add it to the food processor.

Add 5 cloves of garlic to the food processor.

Blend the onion and garlic for about 30 seconds until slushy, then scrape down the sides.

Blend for another 30 seconds until the mixture is liquefied.

Add 1 pound of ground lamb and 1 pound of ground beef to the food processor, breaking it into manageable chunks.

Blend the meats for 1 minute, scraping down the sides as needed until it becomes pasty.

Add 1 teaspoon each of red pepper flakes, thyme, marjoram, fresh cracked black pepper, rosemary, oregano, and 2 teaspoons of salt to the meat mixture.

Blend again for 30 seconds to 1 minute until well incorporated and pasty.

Transfer the meat mixture to a 9 by 5 inch loaf pan, spreading it evenly and eliminating air bubbles.

Tap the loaf pan down to release any trapped air bubbles and clean the edges with a paper towel.

Preheat the oven to 325 degrees Fahrenheit while prepping the meat.

Bake the meat in the oven for 50 minutes to 1 hour, checking the internal temperature to ensure it reaches at least 165 degrees Fahrenheit.

Remove the meat from the oven and let it rest for 30 to 45 minutes until cool enough to handle.

Wrap the meat tightly in plastic wrap and refrigerate for a minimum of 4 to 6 hours, preferably overnight.

After resting, unwrap the meat and slice it thinly, aiming for slices about yay thick.

Portion out the slices if not using all at once, wrapping them tightly in plastic wrap and placing them in a Ziploc bag for freezing.
