2 tsp brown sugar
2 tsp chicken seasoning
2 tsp browning
2 tbsp green seasoning
1 tbsp honey
a bunch of fresh thyme (chopped)
2-3 extra sprigs of fresh thyme
2 small carrots (sliced thinly)
4 garlic cloves (crushed and diced)
1/4 red onion (chopped)
3 spring onions (chopped)
1/4 sweet red pepper (chopped)
1/4 sweet green pepper (chopped)
1/2 yellow scotch bonnet (chopped finely)
1/2 tsp all spice
1 tsp jerk marinade seasoning
1 1/2 tbsp olive oil (for cooking)
1 tbsp brown sugar (for cooking)
1 tbsp browning (for cooking)
1/2 scotch bonnet (finely chopped, for cooking)
1 tsp smoked paprika (for cooking)
1 tsp crushed chillies (for cooking)
1 tbsp all purpose seasoning
1/2 brown onion (sliced & halved)
1 red bell pointed sweet pepper (sliced)
3 garlic cloves (for cooking)
1 tsp fresh ginger (for cooking)
2 tbsp tomato sauce
leftover chicken marinade
1 tsp crushed chillies (optional)
freshly chopped parsley (optional)
4-6 pimento seeds
1 tbsp honey (towards end of cooking)
extra cup of water (optional)

Marinate the chicken pieces with olive oil, salt, black pepper, ginger seasoning, pimento seasoning, garlic seasoning, smoked paprika, brown sugar, chicken seasoning, browning, green seasoning, honey, chopped fresh thyme, sliced carrots, crushed garlic, chopped red onion, chopped spring onions, chopped sweet red and green peppers, finely chopped yellow scotch bonnet, all spice, and jerk marinade seasoning. Let it sit for a while.

In a pot, heat 1 1/2 tbsp of olive oil and brown the marinated chicken pieces.

Add brown sugar, browning, finely chopped scotch bonnet, smoked paprika, crushed chillies, all purpose seasoning, sliced brown onion, sliced red bell pointed sweet pepper, crushed garlic, and fresh ginger to the pot.

Stir in the tomato sauce and the leftover chicken marinade mixed with chicken stock and water.

Add crushed chillies if desired, and sprinkle with pimento seeds.

Cook until the chicken is tender and add honey towards the end of the cooking process. If you prefer a saucy stew, add an extra cup of water.
