1 medium-sized carrot or 1 cup of carrots (julienned)
1 cup snap peas
1 red bell pepper (julienned)
1 cup celery (julienned)
2 cups green cabbage (shredded)
1 cup shiitake or cremini mushrooms (thin strips)
2 tbsp coconut or vegetable oil
4 cloves garlic (minced)
1 medium yellow onion (minced)
1/2 to 1 lb boneless pork belly (small cubes)
1/2 tsp kosher salt
1/2 tsp ground black pepper
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp brown sugar
1 cup chicken stock
8 oz (uncooked) flour stick noodles (sub: spaghetti noodles)
1/2 cup flat-leaf parsley (chopped)
optional garnish: kalamansi or lime wedges

Steam-blanch the vegetables (carrots, snap peas, red bell pepper, celery, green cabbage, and mushrooms).

In a wok, heat the coconut or vegetable oil over medium heat.

Add the minced garlic and onion, sauté until fragrant.

Add the boneless pork belly cubes and cook until browned.

Season with kosher salt, ground black pepper, fish sauce, soy sauce, and brown sugar.

Pour in the chicken stock and bring to a simmer.

Add the flour stick noodles and cooked vegetables, tossing to combine and heat through.

Garnish with chopped flat-leaf parsley and serve with kalamansi or lime wedges if desired.
