3 cups chicken broth
1 tbsp Worcestershire sauce

Heat a heavy bottom pot on high heat and add 2 tbsp of oil.

Place 6 to 8 pieces of chicken skin-side down in the pot and sear until golden on one side, seasoning with salt and pepper.

Flip the chicken and sear the second side, seasoning again with salt and pepper. Remove chicken and place on a plate.

In the same pot, add 1 stick of cinnamon, 6 cloves, 4 cardamoms, and 2 bay leaves. Sauté until fragrant.

Add 2 medium-sized onions (finely sliced) and 3 garlic cloves (minced) to the pot along with 1 tbsp of ginger paste. Sauté until onions are translucent.

Add 1 diced tomato or 2 tbsp of tomato paste and sauté until blended with the onion mixture.

Add chopped celery and carrots to the pot, seasoning with salt and pepper.

Stir in 2 tbsp of all-purpose flour and sauté until the flour loses its raw flavor.

Pour in 3 cups of chicken broth and stir.

Add 1 tbsp of Worcestershire sauce and stir again, allowing the mixture to come to a simmer.

Add 250 g of baby potatoes (halved) and season with salt.

Return the chicken to the pot, skin-side up, pressing it down to immerse it in the soup.

Cover the pot and let the chicken and veggies cook until done.

Remove from heat, plate the stew, and garnish with finely chopped cilantro.
