Jollof Rice with Crispy Fried Chicken

200 grams sweet corn
4 cups basmati rice
less than 1/4 cup oil for frying plantain
1 teaspoon chicken seasoning
1 tablespoon mixed herbs for chicken coating
1 tablespoon paprika for chicken coating
1 teaspoon garlic salt for chicken coating
4 cups plain flour for chicken coating

Turn on the stove and spray light oil in a frying pan.

Finely chop 1 medium-sized white onion and add it to the pan.

Press 4 cloves of garlic using a garlic press and add to the pan.

Saute the onion and garlic for a few minutes.

Add 2 tins of chopped tomatoes to the pan and mix.

Add 1 tablespoon paprika, 1 tablespoon black pepper, 1 tablespoon all-purpose seasoning, 1 tablespoon mixed herbs, 3 tablespoons Italian tomato paste, and 1 teaspoon garlic salt to the mixture.

Allow the mixture to cook for about 10 minutes.

Blend the mixture slightly, adding a little bit of water as needed.

Add 200 grams of sweet corn to the mixture and wash it.

Wash 4 cups of basmati rice and add it to the pot.

Add water to the pot, ensuring there is enough for the rice to cook, and allow it to cook for 25 minutes on medium heat.

Mix the rice and cover with a clean cloth to steam for 10 minutes.

Fry plantains by adding less than 1/4 cup of oil to a frying pan and heating it up.

Remove the skin from the plantains and add them to the pan once the oil is hot.

Fry the plantains until they are golden brown and cooked through.

Prepare a sauce for the chicken by adding 1 medium-sized white onion to a frying pan.

Add light sweet chili sauce, water, a little bit of chili, and chicken seasoning to the pan and mix.

Boil broccoli, carrot, and cauliflower in a separate pot.

Check on the rice and ensure it is cooked through.
