Peel and dice 2 potatoes.
Add salt, pepper, oregano, and paprika to the potatoes.
Cook until potatoes are cooked and brown, about 5-7 minutes, mixing occasionally.
In a bowl, beat 4 eggs and add 200 g (7 oz) of yogurt or sour cream.
Chop spring onion and 8 cherry tomatoes; add to the mixture.
Add salt and pepper to taste.
Cover and cook for 15 minutes on low heat.
Add cheese to taste (I used Parmesan) and parsley.
Cook for another 7-8 minutes.

Peel and dice 450 g (1 lb) of potatoes.
Cook for 5-7 minutes.
Chop 1 onion, 1 carrot, and 1 sweet pepper; add to the potatoes.
Cook for 5 minutes.
Add 450 g (1 lb) of cabbage, salt, pepper, and chili pepper.
Cover and cook for about 15 minutes.
In a bowl, beat 3 eggs and add 200 ml (1 cup) of kefir or yogurt.
Add 4 tbsp of wheat flour, salt, and pepper; mix well.
Add chives to the mixture.
Bake at 180 C (360 F) for 20 minutes.
Add cheese to taste (I used grana padano) and bake at 180 C (360 F) for another 15 minutes.
