Parboil the vegetables: 3 large carrots, 3 large potatoes, and 1 medium onion cut into half-moon thick slices.

Bring water to a boil with the vegetables, then reduce heat and boil for about 10 minutes if cut thick, or 5 minutes if cut thinner.

Strain the vegetables but reserve the cooking water to use as stock.

To the reserved water, add 1 teaspoon of beef stock powder and stir to dissolve, then set aside.

Preheat the oven to 180°C with a fan.

In a small bowl, combine 1 tablespoon of finely chopped parsley, 1 teaspoon of salt, and 1/2 teaspoon of black pepper; mix and set aside.

In a bowl, combine 500g of beef mince, 1 medium finely chopped onion, 1 cup of soft breadcrumbs, 2/3 cup of evaporated milk, 1/2 teaspoon of mixed herbs, 1 teaspoon of salt, 1 tablespoon of Worcestershire sauce, 1/4 cup of tomato sauce, and 1/2 teaspoon of black pepper; thoroughly combine.

Shape the meat mixture into a loaf and place it in a greased dish.

Arrange the reserved parboiled vegetables around the meatloaf and sprinkle with the parsley, salt, and pepper mixture.

Pour the reserved stock over the meatloaf and vegetables, cover with aluminum foil, and bake for 1 hour.

After 1 hour, remove from the oven and uncover; spread a little butter or oil on the meatloaf and return it to the oven uncovered for 10 minutes to brown.

Remove the meatloaf and vegetables to a plate and cover to keep warm while making the sauce.

In a saucepan, pour the reserved liquid from the baking dish, and in a small bowl, mix 1 tablespoon of flour or corn flour with a little cold water to make a slurry; add this to the sauce.

Add a pinch of mustard powder or 1/2 teaspoon of prepared mustard, 1 teaspoon of Worcestershire sauce, and 1 tablespoon of tomato sauce to the saucepan.

Cook the sauce over medium heat until it thickens, adding more water if it becomes too thick, then bring to a boil.
