Wash about 1/2 to 3/4 cup of lentils thoroughly.
Heat 1/4 cup of Waitrose extra virgin olive oil in a large pot over low heat.
Add chopped onions and cook until translucent.
Add fresh tomatoes and season with salt and black pepper.
Stir in cumin, garlic, ginger, and chili flakes; cook until fragrant.
Add lentils to the pot and toast them briefly.
Add chopped pumpkin, carrots, and sweet potatoes; let simmer for 1-2 minutes.
Pour in 1 cup of coconut milk and 1 cup of water, ensuring the liquid covers the vegetables.
Add 2-3 sprigs of thyme and cover the pot; cook for 30-35 minutes.
After cooking, remove thyme and blend 1 cup of the soup for a creamy texture.
Add the blended soup back into the pot along with chopped kale; let it wilt for 4-5 minutes.
Finish with a squirt of lemon juice to brighten the flavors.
