6 servings
Servings4
2 cups Granny Smith apples
2 cups flour
1 cup sugar
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup milk
1/2 cup heavy cream
1/2 cup butter
2 eggs
1 teaspoon vanilla extract
1

Fill a medium-sized bowl with ice water and set aside.

2

In a medium-sized saucepan, add milk and heavy cream and let it slowly heat up.

3

Separate two egg yolks and place them in a medium-sized bowl. Add sugar and salt, whisking until it resembles a yellowish paste.

4

Once the milk and heavy cream mixture is steaming, take it off the heat and slowly add it to the egg mixture, whisking quickly to avoid scrambling the eggs.

5

Return the custard mixture to the saucepan over low-medium heat and cook for about 10 minutes, stirring constantly until it coats the back of a wooden spatula.

6

Strain the custard through a fine mesh sieve into a bowl and place it in the ice water to cool. Stir until the temperature goes down, then add vanilla extract and cover with plastic wrap. Refrigerate for at least three hours.

7

In a medium-sized bowl, add flour, baking powder, salt, cinnamon, and nutmeg, whisking until fully incorporated.

8

Cut cold butter into the flour mixture until it resembles coarse crumbs, using a pastry cutter or your hands.

9

Add white sugar to the flour mixture and stir until mixed together. Set aside.

10

Dice Granny Smith apples into small chunks, tossing them in the flour mixture until coated. Set aside.

11

In a large bowl, mix together eggs, milk, and vanilla extract to combine the wet ingredients.

12

Add the dry ingredients to the wet ingredients and fold until combined; the batter will be thick.

13

Prepare an 8-inch cake pan by cutting out parchment paper for the bottom, spraying the pan, placing the parchment, and spraying again.

14

Pour the cake batter into the prepared pan and level the top.

15

For the streusel, mix flour, brown sugar, and salt in a small bowl, then add melted and cooled butter, stirring until it resembles a clumpy paste.

16

Break the streusel up using hands and sprinkle it over the top of the cake batter.

17

Bake the cake at 350 degrees Fahrenheit for 50 to 55 minutes, checking with a toothpick to ensure it's cooked through.

18

After baking, let the cake cool for 15 minutes, then loosen the edges and remove from the pan.
