Start with a ripe beef steak tomato that has been sitting out for about a day and a half to develop flavors.
Using clean hands and a sharp knife, cut down the tomato while leaving the core intact.
Remove the core from the tomato and chop the flesh into medium-sized pieces for a good mouth feel.
Place the chopped tomato into a mixing bowl.
Slice a red onion as finely as possible and add it to the bowl with the tomatoes.
Sprinkle half a teaspoon of garam masala over the tomatoes and onions.
Add a little bit of lime juice to enhance the flavors.
Chop some cilantro and add it to the bowl for color and flavor.
Add about 1 tablespoon of desiccated coconut to the mixture.
Sprinkle salt and black pepper to taste, mixing everything together well.
Cover the bowl and place it in the refrigerator for about half an hour to let the flavors marry together.
After chilling, mix the salad again to combine the flavors and moisture.
Spoon the salad into a serving bowl, ensuring a good balance of tomatoes and onions.
Garnish with a little more desiccated coconut, a touch of cilantro, and a couple more twists of salt and pepper.
