Start by making the dough using a shortbread cookie recipe as a base.
Add 3/4 cup of almond flour to a mixing bowl.
Add 1/2 cup of self-raising whole meal wheat flour to the bowl.
Add 1/4 cup of cornstarch to the mixture.
Add 1/4 teaspoon of salt to enhance sweetness.
Mix the dry ingredients until there are no big lumps.
Add 2 tablespoons of yogurt to the mixture.
Add 2 tablespoons of maple syrup, mixing well.
Knead the dough until it forms a uniform ball, being careful not to over-knead.
Use parchment paper to roll out the dough into a rectangle about a couple of millimeters thick.
Trim the edges to make a square and cut it into smaller squares.
Sprinkle rice flour on one side of the dough to prevent sticking.
Prepare 1 cup of apple sauce, adding 2 tablespoons of coconut sugar and 1 tablespoon of starch, then cook until thickened.
Place about a teaspoon of apple puree onto each square of dough.
Fold two corners of each square together and squeeze to seal the parcels.
Place the apple parcels on a non-stick baking tin lined with parchment paper.
Preheat the oven to 180 degrees Celsius (350°F).
Bake the parcels for 20 to 25 minutes until slightly golden at the edges.
Remove from the oven and let cool before serving.
