Add chopped onions and garlic; sauté until translucent, about 3-4 minutes.

Stir in diced potatoes and chopped mushrooms; cook for another 5 minutes.

Pour in vegetable broth and add bay leaf; bring to a boil.

Reduce heat and simmer until potatoes are tender, about 15-20 minutes.

Remove bay leaf and blend the soup until smooth using an immersion blender.

Stir in cream and thyme; heat gently without boiling.

Season with salt and black pepper to taste.

Garnish with chopped parsley before serving.
