1

Add 2 cups all-purpose flour, 4 tablespoons semolina, 2 tablespoons sugar, 1 tablespoon baking powder, and 0.5 teaspoon baking soda into a blender.

2

Pour in 3 cups of warm water, adding 2 cups first and then 1 more cup later, and blend until smooth.

3

Let the pancake batter rest for 30 minutes to achieve the right texture.

4

Chop one mango into very small pieces instead of blending it.

5

Crush a handful of pistachios and mix them in a bowl with 180 grams of cream cheese and the chopped mango.

6

Prepare sugar syrup by boiling 1.5 cups sugar, 0.75 cup water, and 1 teaspoon lemon juice until the sugar dissolves.

7

After the batter has rested, heat a pan over medium heat and pour in 0.25 cup of the batter, cooking until bubbles form on top and the white color fades completely without flipping.

8

Cover the pancakes to prevent them from drying out after cooking them all.

9

Fill each pancake with 1 tablespoon of the mango cream cheese mixture, fold them into a half-moon shape, and press to seal.

10

Deep fry or shallow fry the filled pancakes in oil until they turn golden brown, then dip each in the sugar syrup before serving.
