Homemade Belgian Waffles with Blueberry Sauce

Combine flour, sugar, quick rise yeast, and salt in a large bowl.
In another bowl, whisk together eggs, egg yolk, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Preheat the waffle iron according to the manufacturer's instructions.
Grease the waffle iron lightly with cooking spray or oil.
Pour an appropriate amount of batter into the preheated waffle iron and close the lid.
Cook until the waffles are golden brown and crisp, about 5-7 minutes.
Remove the waffles and keep warm while cooking the remaining batter.
In a saucepan, combine blueberries, lemon juice, lemon zest, and water over medium heat.
Cook until the blueberries start to burst, about 5 minutes.
Stir in cornstarch mixed with a little water to thicken the sauce, cooking for an additional 2 minutes.
Serve the waffles topped with warm blueberry sauce and chantilly cream.
