Tofu is plant-based, while chicken thighs are less expensive than breasts.
Cut the whole chicken into about eight pieces and place in a bowl.
Add 1 teaspoon each of salt, pepper, chili powder, cumin powder, coriander powder, and turmeric to the chicken.
Add 2 to 3 tablespoons of oil to the chicken and mix well.
In a pan, heat 1 heaped tablespoon of coconut oil over slightly above medium heat.
Add 1 teaspoon of cumin seeds and spin them around for a few seconds.
Add 1 cup of chopped onions and cook for about 4 to 5 minutes until softened.
Stir in 1 tablespoon of ginger garlic paste and some fresh chili (to taste).
Add the chicken pieces to the pan and cook for 8 minutes on slightly above medium heat.
Add 2 cups of fresh tomatoes and cook for 5 to 6 minutes, stirring often to break them down.
Add 1 cup of water and cover the pan, lowering the heat just below medium for 6 to 7 minutes.
Remove the chicken and blend the sauce until smooth using a hand blender.
Reintroduce the chicken to the sauce and cook for another 5 minutes, stirring occasionally.
Add more salt to taste and a couple of pinches of garam masala powder.
Stir in fresh mint as a garnish instead of cilantro.
