Season the salmon with salt, black pepper, onion powder, and garlic powder; rub the seasonings into the salmon.
Boil water with salt and a little oil; cook lasagna noodles halfway for about 8 minutes, then remove them from the heat.
In a cast iron skillet, melt a quarter stick of unsalted butter with some coconut oil; add chopped garlic and onion, sauté until translucent.
Add chopped celery and spinach to the skillet; cook until the spinach is wilted, then remove from heat.
Sear the salmon in the skillet until it has a nice crust, flipping it halfway through; do not cook all the way through as it will finish in the oven.
Break the salmon into chunks, ensuring they are not too small, and set aside.
Make a sauce by combining heavy whipping cream with some of the seasoning used on the salmon, smoked paprika, and a dab of nutmeg; let it thicken for about 5-7 minutes.
In a mixing bowl, combine ricotta cheese, cream cheese, parmesan cheese, and chopped parsley; mix until well combined.
Spread some of the sauce on the bottom of a baking dish to prevent sticking.
Layer lasagna noodles on top of the sauce, followed by chunks of salmon, the spinach mixture, and a layer of cheese.
Add some of the sauce over the cheese layer, then top with mozzarella cheese.
Repeat the layering process until all ingredients are used, ensuring to add sauce and cheese in each layer.
For the final layer, drizzle sauce over the top and add remaining cheese, including parmesan and kobe jack.
Sprinkle a pinch of smoked paprika over the top before covering the dish.
Preheat the oven to 375°F while assembling the lasagna.
