Cut 1 kg chicken thighs into barbecue-sized pieces, making 30 pieces in total.

In a bowl, mix 2 tablespoons lemon juice, 2 tablespoons yogurt, 1 teaspoon ginger-garlic paste, 1 teaspoon salt, 1/4 teaspoon cumin powder, 1/4 teaspoon red chili powder, 1/4 teaspoon garam masala, and 1/4 teaspoon food color (optional).

Add the chicken pieces to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.

Chop 75 grams of onion and mix with 2 tablespoons cilantro, 1 green chili, 1 teaspoon butter or ghee, 1/4 teaspoon chili flakes, 1/4 teaspoon black pepper, and 1/4 teaspoon coriander powder to prepare the seekh kebab mixture.

Form the seekh kebabs using the chicken mixture and place them on skewers.

Preheat the oven to 375°F (190°C) and bake the kebabs for 25-30 minutes, turning halfway through.

For the flatbreads, mix 2 cups flour, 1 teaspoon baking powder, 1 tablespoon oil, and enough water to form a medium-soft dough. Let it rest for 30 minutes.

Roll out the dough and place it on top of the kebabs in a baking dish, sealing the edges.

Brush with beaten egg and sprinkle sesame seeds on top.

Bake for 30-40 minutes until golden brown.
