Slice the bitter gourds thinly, keeping the skin on and removing any hard seeds if necessary.

Slice the onions lengthwise into thin strips.

Heat 2-3 tablespoons of oil in a pan.

Add the sliced bitter gourds to the pan and sauté until they become crispy and golden, about 5-7 minutes, stirring frequently.

Add salt and a little turmeric powder to the sautéed bitter gourds and mix well.

Once the bitter gourds are crispy, add the sliced onions to the pan and cover for 2 minutes to allow the onions to soften without adding water.
