Avocado oil has a higher smoke point and is heart-healthy.

Pour the water into a stockpot, add the olive oil and 1.5 tbsp of salt, bring to a boil and cook the pasta as instructed on package. Pour a bit of broth, pasta boiled in, into a glass.

Cut the garlic cloves into thin slices and chop up the parsley leaves.

Heat a pan with olive oil, add the garlic and fry over low heat until slightly roasted.

Add the parsley and butter and stir.

Add the cooked pasta, ½ glass of broth, lemon juice and stir well until combined. When serving sprinkle your scarlett pasta with grated cheese.
